Halloumi/Hellim was granted PDO status in April 2021, meaning that the Halloumi/Hellim name can be used only for products made in Cyprus according to strict product specifications. The Food Safety Project experts provide consultations to support food business operators interested in obtaining the PDO certificate. Assistance is being provided also to their milk suppliers and related feed producers. In cooperation with the Food Safety Project, several documents have been prepared under the TAIEX instrument to address the key elements of the Halloumi/Hellim PDO requirements. These can be found in the form of different procedure outlines below. They are relevant for farms producing PDO-compliant milk, entities distributing the milk, Halloumi/Hellim producers as well as producers of PDO-compliant feed.
